<正>由于工作关系,笔者有机会前往海外参加客属社团的一些活动。在海外侨胞较多的地方,经常可见客家盐焗鸡、梅菜扣肉、腌面、鱼丸等客家菜式的酒店、酒楼、饮食店,以及广告,甚至在一些小镇,也同样可以看到客家菜馆的招牌。可见,客家菜在世界各地的传播甚广,名声甚开。那么,客家菜是怎样形成和发展的?有什么特色?为什么会在海外存在和发展?
