Abstract: To select the alfalfa leaf protein extraction process conditions and analyze difference for different strains of alfalfa leaf protein, the single factor analysis of range method was used in this study, leaf protein extraction rate were measured in 280nm by uv spectrophotometry, the best extraction technology was identiifed by the result of L9(33) orthogonal experiment design. The results showed that the inlfuence of various factors were pH>macerating time > Liquid to solid ratio >temperature, the best combination of orthogonal test was A2B1C1. The leaf protein contents extracted from San Deli (Lan Zhou) contrast and MA- 7 were relatively higher at 21.91% and 19.42%respectively.
