Abstract: 养禽业的最终目的是提供数量多、质量好的禽肉,在育种工作中,量多质优才是人们所追求的两大主要目标.禽肉品质已经引起了人们的广泛重视.国内外学者对肉质开展了研究,取得了较大的进展.该文从PSE肉和DFD肉的发生机制以及影响肉质特性的因素进行综述.在此基础上,初步提出了提高家禽肉质所要采取的措施,以期为家禽肉质的进一步研究提供基础资料和理论依据.
