Abstract: 本研究采用单因素试验和三因素正交试验对流加碱法和缓冲盐法在保加利亚乳杆菌冻干工艺中的增菌效果进行了研究,为保加利亚乳杆菌冻干菌的生产提供参数.结果显示,流加碱法增菌中,50%氨水溶液的增菌效果最好;缓冲盐增菌中,增菌效果最佳优化组合为5%的添加量、pH值为6.2、缓冲盐体系为C6H8O7·H2O-Na3C6H5O7·H2O;综合比较两种增菌方法,流加碱法效果优于缓冲盐法.
