Abstract: 味精的主要成份是谷氨酸钠,成人每人每天摄入的味精量超过6克,血液中的谷氨酸含量就大大升高,它可能减少人体对二价阳离子钙和锌的利用,短期引起头痛、恶心、心跳加快,还可能对生殖系统产生影响。味精不耐高温,若超过100℃时就可能生成有毒的焦谷酸钠,影响健康,味精适宜在80℃左右使用。不能长时间炒、烤、炸、煮、烧。一般宜在菜肴起钢前再放味精。食用味精不能过量,还要注意火候@寒星
