Abstract: Amaranthaceae has about 6O genuses, 850species, distributing in the tropical and temperate zones.There are 13 genuses and 39 species in China. Containingrich proteins and vitamins,many species are under econom-ical exploitation. This paper gives a brief introduction of thedistribution, biological characteristics, nutrient contents,cultivating methods of Celosia argentea L., Amarahthusspinosus L. , Achyranthes bidentata BL., Amaranthus vi-vidis L. and Alternathera sessilis (L. )DC.
