Abstract: 啤酒废酵母菌体自溶技术,是从啤酒废酵母中提取及制取各种生化制品的关键技术。因而,啤酒酵母菌体自溶技术的改进及提高,对生产实践有重大意义。我们通过实验发现采用变温法自溶(40—60.PH4.5.24hr),比国内外常用的传统的恒温法自溶(55±1℃,PH5.5,36hr),不仅自溶程度,收得率及成品品质均有较大的提高,而且自溶时间也大大降低,有较高的经济价值及推广价值。
