Abstract: 试验研究一种能够准确评价番茄硬度的测定方法,建立番茄在贮藏期间硬度变化的动力学模型.在分析测定番茄硬度变化的全过程后,认为番茄硬度和测定硬度时的变形量应同时用于评价番茄的品质.研究表明,番茄硬度在贮藏期间的变化符合一级动力学模型,通过试验确定模型的参数,对新鲜番茄初硬度进行测定,可预测番茄的品质变化,为番茄的采摘和贮运提供理论依据.
