Abstract: 研究了从红枣中提取色素的工艺条件和色素的理化性质.结果表明,将红枣在85℃左右烘干,粉碎为2 mm×2 mm的颗粒,按料液比(m/V)1:20,温度80℃,pH5,用60%乙醇浸提2 h,可得黄色素;将红枣在120℃左右烘干,粉碎为2 mm×2 mm的颗粒,按料液比(m/V)1:20,温度70℃,pH5,用30%乙醇浸提1 h,可得红色素.2种色素对酸、碱、光、热、氧化还原剂,食品添加剂和金属离子性质稳定.
