Abstract: 鲟鱼是古老的软骨硬鳞鱼类,起源于白垩纪时期,迄今已有2亿年的历史,素有“水中活化石”之称.其肉质细腻、味道鲜美,营养价值高,尤其是鲟鱼子酱富含优质蛋白质、氨基酸和微量元素,被誉为“黑色黄金”,与鹅肝、松露并称为世界三大美食. 鲟鱼的人工繁育可追溯至19世纪70年代,距今已有140多年历史.前苏联在鲟鱼的人工繁殖和增养殖研究方面历史悠久,创了世界鲟鱼养殖的先河.
