Abstract: Lunasin encoded within 2S albumin(Gm2S–1)gene of the soybean was a functional peptide.It was composed of 43 amino acid residues with a molecular weight of 4.8 kDa.Extensive scientific studies showed that lunasin possessed anticancerous,antioxidative,anti–inflammatory properties and could also reduce content of cholesterol.Advances of lunasin in sources,isolation, identification,and biological activities were summarized,and applications of lunasin in food processing of soybean and cereal in the future were pointed out.
