Abstract: Citrus pulp beverage has excellent taste and rich nutrients. With the rapid growth in consumer demand, the industry development room is wide. The process of dehull and removal of endocarp producing are technical difficulties which regulate industry’s development. The research progress of the technology of dehull and removal of endocarp technology are carding and summarized, aiming to provide a reference for the development of Citrus pulp beverage.
