Abstract: 以浙农2号和浙农4号等茭白品种为试验材料,通过对温度、湿度、O2和CO2浓度的单因子试验和正交试验优化得出SMCS内茭白保鲜的环境控制条件,并测定茭白的呼吸强度、感官质量和过氧化物酶活性等保鲜指标及其贮藏期内动力学变化.结果表明,温度、湿度、O2和CO2浓度中的单一因子在其它因子固定不变条件下,都会对SMCS内茭白的呼吸强度和感官质量产生影响,其适宜的控制范围分别为温度0~1℃、相对湿度90%~100%、O2浓度15%~20%、CO2浓度15%.L16(45) 正交试验优化得出最佳环境条件为:温度1℃、相对湿度100%、O2浓度16%、CO2浓度18%.
