Effects of different storage conditions on physiological characteristics and quality in yam tubers

Abstract: 为了筛选铁棍山药(Dioscorea opposita Thunb.cv.Tiegun)贮藏的适宜技术参数,采用4℃、10℃、窖藏、室温及不同窖藏天数+4℃的贮藏方式,研究铁棍山药块茎生理特性及品质性状变化规律.结果表明,窖藏、室温贮藏块茎的过氧化物酶(POD)活性分别在72和110 d达到峰值,之后呼吸速率、丙二醛(MDA)积累快速上升,块茎品质迅速下降.与室温贮藏相比,4℃贮藏155 d后,山药块茎呼吸速率降低73.54%,MDA含量积累减少58.66%,块茎失重率降低4.74%.POD活性高峰推迟45 d出现;4℃贮藏块茎粗多糖含量损失、可溶性蛋白含量损失较窖藏分别降低20.48%和28.73%;低温贮藏块茎淀粉含量略低于室温贮藏.4℃,10℃下贮藏山药块茎的粗多糖和可溶性蛋白含量无明显差异.将窖藏110 d后的山药转入4℃下贮藏,有利于贮藏后期山药块茎品质的保持.因此,铁棍山药贮藏的适宜温度为10℃,相对湿度为80% ~ 85%.因成本低、效果好,窖藏结合后期低温贮藏可在山药的商业贮藏中应用.
