Abstract: Objective Simultaneous determination of nitrate and nitrite in cooked meat products is established by ion chromatography.Methods The sample after the removal of fat and protein,using 3.2 mmol/LNa HCO3 and 1.0 mmol/LNa HCO3 as the eluent,flow rate of 0.6 m L/min,conductivity detector,sample by the British blue ultrafiltration device filter directly into the sample.Results The determination of nitrate and nitrite in cooked meat products by the method the results,good correlation(r>0.999),high precision(RSD<3.2 %),and the recovery rate of 82.8 %-94.0 %,high accuracy.Conclusions The method is simple,rapid,high sensitivity,is suitable for large-scale sample analysis.
