Abstract: The formulation for chocolate processed cheese is studied with natural cheese and cocoa powder as raw materials. In order to make sure the best process of the chocolate processed cheese,the experiment studied how additive amount of cocoa powder, water, emulsifying salts and emulsification time affect the color, smell and organization state of the chocolate processed cheese by single factor experiment and orthogonal experiment. The results of the experiment showes that the best process of the chocolate processed cheese is additive amount of emulsification salt is 2.0%,additive amount of water is 30%,additive amount of cocoa powder is 1.0%,and that emulsification time is 8 min. The final chocolate processed cheese not only maintains the texture of traditional processed cheese,but also gains the flavor and antioxidant ability of cocoa powder.
