Optimization of Vacuum Pumping Process of Frozen Apple

Abstract: In order to enhance the products quality of frozen apple,taking the apple as raw material,the vacuum pumping process of freezing apple is optimized using orthogonal array design analysis. The results show that the optimum process of vacuum pumping are as follows:the vacuum pumping time is 20 min,vacuum degree is 0.7 MPa,vacuum pumping medium is 2% Na Cl+0.3% sodium D-isoascorbate. Compared with the traditional process,the sensory evaluation,color and texture parameters of frozen apple that produced by new production are obviously increased.
