Abstract: Studied the method of extraction and separation of β-1,3-Dglucan from yeast and identified its structure.The yeast polysaccharide was extracted by alkali-enzyme method,then,the structure of yeast glucan was analyzed by IR,and its monosaccharide compositions were analyzed by HPLC.Two fractions of polysaccharides were isolated and identified as YPⅠand YP,Ⅱrespectively,by alkali-enzyme method.Total sugar contents in each fraction were 70.45% and 84.86%,respectively.Meanwhile,YPⅠwas mostly mannose, and β-1,3-D-glucan of YPⅡwas in high purity.
