Abstract: Melon seed oil was extracted by supercritical CO2 extraction technology. Based on the single factor experiment, orthogonal experimental design was employed to optimize process parameters. The re-sults showed that the optimal extraction conditions were obtained as follows:extraction pressure 30 MPa, extraction temperature 45℃, extraction time 5 h, flow rate of CO2 8 L/min, particle size of melon seed 24 meshes. Under these conditions, the yield of melon seed oil was 29. 34%. Fatty acid composition of melon seed oil was identified by GC-MS, and the results indicated that melon seed oil extracted by su-percritical CO2 contained twelve kinds of fatty acids, and linoleic acid ( 64. 29%), oleic acid (16. 64%), palmitic acid (10. 87%) and stearic acid (5. 57%) were the main fatty acids in melon seed oil.
