Abstract: 豆类中,就数青蚕豆吃的名堂多.老家宾川有人说它是“吃不够的青豆豆,喊不够的亲妈妈”,绝了. 青蚕豆做菜,不能不说炒青蚕豆,炒青蚕豆是农家餐桌上的当家菜.蚕豆有(火巴)的,有不(火巴)的.有不用说炒,怎么煮都煮不(火巴)的.除了豆种的原因,也有水土的关系,青蚕豆还嫩的时候,常常是豆粒带豆壳一起炒吃的,稍许放点点土碱,炒熟的青蚕豆绿莹莹的,豆壳鲜嫩,豆粒又面又甜.古人也吃这个,南宋杨万里有诗道:“翠荚中排浅绿珠,甘欺崖蜜软欺酥.”朴素清丽的诗句,把青蚕豆色碧味甜的美味描写到极致.
