Abstract: Smartongue is a kind of analysis instrument to imitate the functions of human tongue.After years of development,smartongue has been playing an increasingly important role in many fields,but it still has not been applied in culinary research field,Smartongue is used for the principal component analysis of sweet and sour sauce made by different people with different formulations,which demon-strates that smartongue has good identification and distinction functions.The development of smart-ongue in cuisine is prospected.
