Study on kinetic models of anaerobic ethanol fermentation

Abstract: The fermentation kinetics of glucose to ethanol was studied by using Saccharomyces cerevisiae BY4742.According to the optimal factors,three kinetic models,cell’s growth,product’s formation and substrate’s consumption,were established on the base of Logistic equation,Leudeking-Piret equation and analogous Leudeking-Piret equation.Models were fitted to get the estimates of the parameters by software.The results showed that,the formation of ethanol were related with both yeast’s growth rate and the cell concentration.The fermentation kinetic of BY4742 was classified as part-coupling model,according to whether the growth of cell and the formation of product were coupling.The degree of fitting of substrate’s consumption curve and product’s formation curve,R2,was reached to 0.983 and 0.900,respectively,which mean that the models could describe the process of fermentation to turn glucose into ethanol based on Saccharomyces cerevisiae BY4742.
