Abstract: [目的]了解食用的八角茴香油有效成分,并分析其对烟草加香的效果.[方法]采用全二维气相色谱飞行时间质谱联用仪分析广西八角茴香油挥发性成分及它们对其香气的影响.[结果]分析显示,全二维气相色谱飞行时间质谱法共鉴定出匹配度较高的31种香味成分,占挥发油总比例的91.7%;利用二维色谱分离出在GC-MS中无法分离的1-甲基-4-(1-甲基乙烯基)-苯、3,7-二甲基-1,6-辛二烯-3-醇等组分;在所分离的八角茴香油的主要成分中,对香味贡献较大的有:β-蒎烯、a-水芹烯、柠檬烯、草蒿脑.[结论]研究可为深入了解茴香油的组成成分提供依据.
