Abstract: According to the evaluation of physical and chemical indicators ,we use F test to get a review of the wine part of red and white wine whose ratings results have significant differences ,and require the evaluation credibility by using multiple series correlation analysis .We use principal component analysis to reduce the number of physical and chemical indicators ,get the weights by AHP evaluation model ,to classify wine grapes into five grades A ,B ,C ,D ,E by using SPSS software ,which objectively reflects the connection between the physical and chemical indicators and wine quality .
