Abstract:
<正> 食用纤维不仅是以前通称的粗纤维,它包括:纤维素、木质素、半纤维素、五碳糖、胶质和果胶。食品中粗纤维和食用纤维的含量没有一定的关系,玉米片中,食用纤维含量是粗纤维的15.7倍,而在生草莓中,只有1.6倍,一百克白面包含有的食用纤维比100克苹果和草莓中的含量还多些。
