Abstract: 分析了两个栽培种芒果种仁的化学成分、脂类、脂肪酸、氨基酸和蛋白质量。芒果种仁约占果实的18%,种仁含蛋白质5%,粗脂肪6—7%,丹宁0.19—0.44%,碘值为34—44,皂化值为203—213。油酸(42%)和硬脂酸(39%)是种仁脂肪的主要脂肪酸。必需氨基酸指数和蛋白质量指数高,表明芒果种仁的蛋白质量好。
