Abstract: <正> 南京地方风味特色菜肴——南京板鸭,历史悠久,素享盛名,行销中外。 早在唐、宋时期,南京人就开始制作板鸭。但其方法极为简单,品质亦较粗糙,只是在秋末和冬季,将宰杀后的光鸭,用盐腌渍日久即成。因其腌制时间较长,鸭体发板,故称板鸭,亦称成板鸭。
