Abstract: 一、概述猴头菌[Hericiumerinaceus(Bull.exFr)Per],又名猴头蘑、熊头菇、刺猬菌。猴头菌隶属担子菌纲,无隔担子菌亚纲,多孔菌目,齿菌科、猴头菌属。猴头菌是一种著名的食用菌,因其营养丰富,味道鲜美而与熊掌、海参、鱼翅并列中国四大名菜,素有“山珍猴头、海味燕窝”之美称。猴头菌不仅膳食,也可入药。猴头菌子实体所含多糖和肽类物质可增强人体免疫功能,其发酵液对小鼠肉瘤180有抑制作用。我国利用猴头菌菌丝体研制成“猴头菌片”等中成药对治疗胃部十二脂肠溃疡,慢性胃炎,萎缩性胃炎,胃癌及食道癌有一定疗效。猴头菌原为野生,以秋季发生较多,多生于栎树等腐叶立木上或腐木上,少生于倒木,主
