Abstract: <正> 一 "味"字很有味道,由"口"加"未"组成。未入口的食物是何滋味?未来入口的食物滋味如何?这里涵蕴悬念、玄意。八笔成"味",映出了"吃"的哲理轮廓,散发着味文化和味学的爨香。"味"字旌旗下,是浩浩荡荡的鼎俎军旅,翻越肴山馔海,去争夺吃的神玺。孙子势篇:"味不过五"(酸、苦、甘、辛、咸称五味)。此谓似将人们对品味的概念给定格了,遂有"五味人生"、"调和五味"之由。我赞同"五味人生",然"调和五味"之"苦"味,宜以"鲜"味易之。概因烹调五原味,各为帮味之主,苦味亦为主,我持异议。
