Abstract:
<正> 近十年来从油料籽和油料粕提取供人食用的蛋白方法发展很快。通过最佳方法可以直接利用油料蛋白而减少利用动物胃所造成的损失。此外油料蛋白是以生产费用低和应用技术特性可变性强为特征的。当各种油料的氨基酸光谱有区别时,将大豆和葵花籽蛋白混合一起可得到比肉还要高的生物价。这种蛋白的使用范围为肉制品、肉肠制品、烘烤制品以及奶制品。
