Abstract: [目的]优化复凝聚喷雾干燥法制备葱油香精微胶囊的喷雾干燥阶段生产工艺.[方法]在前期研究的复凝聚工艺基础上,通过喷雾干燥实现对葱油香精的二次包埋,通过单因素试验,研究了不同壁材组合、壁材间的比例、芯材含量及料液浓度对微胶囊包埋效率及产率的影响,再通过正交优化试验,得到喷雾干燥的最佳工艺条件.[结果]复凝聚喷雾干燥法制备葱油香精微胶囊最佳工艺条件为阿拉伯胶和麦芽糊精比例为1∶1,芯材含量25%,料液浓度18%.该条件下的包埋效率达80.7%,产率达95.3%.[结论]复凝聚喷雾干燥法制备微胶囊可以增加膜厚,提高芯材物质的稳定性,延长产品的货架期.
