Abstract: 以电热鼓风恒温干燥箱在不同温度下干燥阜平红枣,研究了红枣的热风干燥特性,选取6个常用的薄层干燥数学模型对实验数据进行拟合,建立了红枣薄层干燥数学模型,并对不同干燥温度下所得产品的硬度和色泽变化进行测定。结果表明:红枣的热风干燥只有降速干燥一个阶段;Page模型(MR=exp(-ktn))拟合精度最高,适合用于模拟红枣的热风恒温干燥过程,可以用于预测红枣的干燥过程;红枣的硬度随干燥温度的升高而升高;干制红枣的L*值、a*值、b*值随干燥温度的升高均降低,与未干燥红枣差异显著。
