Abstract: 以双孢蘑菇品种W-192为试验材料,系统研究了3个采收期(根据菌盖直径和生长期分别记菌盖直径2~3,3~4,4~5 cm为采收期Ⅰ、Ⅱ、Ⅲ)双孢蘑菇的含水量、开伞率、褐变度、呼吸强度、总多酚、多酚氧化酶(PPO)活性及丙二醛7个指标在低温贮藏(4±1)℃期间的变化特征.结果表明,与采收期Ⅰ和Ⅲ相比,采收期Ⅱ的双孢蘑菇延后3d左右才出现呼吸高峰,丙二醛含量始终较低,含水量在贮藏前期较高,白度值在贮藏后期保持较好,开伞率在贮藏后期低于其他2组,体现出更好的耐贮藏性.对于低温贮藏的双孢蘑菇W-192,应在采收期Ⅱ采收;对即将上市的蘑菇可在采收期Ⅲ采收.
