Abstract: 从西瓜大棚的土壤中筛出一株可以发酵生产瓜氨酸的菌株SK23.001,经鉴定为粪肠球菌(Enterococcus faecalis)。为进一步提高瓜氨酸的产量,对菌株SK23.001的发酵条件进行优化。确定了最佳接种菌龄为12h,发酵时间为16h。单因素实验和正交优化实验确定了最佳的发酵培养条件:碳源为蔗糖0.5%,氮源为大豆蛋白胨和NH4Cl,接种量3%,装液量50mL/250mL,起始pH6.0,温度37℃;100g/L的L-Arg转化反应6h,经HPLC检测产量可达83.06g/L。
