Abstract: 对桔皮中果胶的微波萃取工艺参数进行研究。结果表明,影响果胶得率最重要的因素是微波功率,其次依次是萃取时间、萃取液的pH值和料液比;获取桔皮果胶得率最大值的各参数最优值为微波功率450瓦、萃取时间5分钟、萃取液pH值为1.5、料液比110。在此条件下果胶得率为15.41%。
