Abstract: 挑选肉类首先要看外观,新鲜禽肉皮肤有光泽,肌肉切面有光亮;变质的体表无光泽.新鲜的禽肉眼球饱满,角膜有光泽;变质的则眼球干缩凹陷,晶体混浊.其次,新鲜禽肉外表微干或微湿润,不粘手,经过指压后凹陷能立即恢复;而变质的外表干燥或者粘手,新切面发黏,手按了之后不能恢复原状并留有凹痕.禽流感病毒在冰冻的肉类中可以存活300天左右,因此冰箱、冰柜里长期储藏的家禽肉最好不要食用.
