Abstract: 用乙醇从中药大黄中提取色素,对大黄色素抑菌作用进行研究.结果表明,一定浓度的大黄色素对大肠杆菌、金黄色葡萄球菌、黑曲霉、啤酒酵母都有抑制作用,其抑菌作用强弱的顺序为:金黄色葡萄球菌>黑曲霉>啤酒酵母>大肠杆菌,尤其对金黄色葡萄球菌抑菌作用更为显著.实验结果同时表明,大黄色素在中性、酸性抑菌作用最强,并能耐受高温短时、超高温瞬时热处理,从而推断它可作为抑菌剂应用于食品中.
