Abstract: 目的 查明2011年天津开发区某合资企业发生的一起食源性疾患的原因.方法 采用统一的个案调查表,对所有病例进行流行病学调查,并对可疑食物进行相关实验室检验.结果 该企业320名员工中88人发病,罹患率27.5%,且88名患者均食用变质鲅鱼.结论 食用保存不当而发生变质的鲅鱼,是造成本起事件的主要原因.
