Abstract: 测定了红桔浮皮枯水果的生理生化指标,结果表明:浮皮果的密度为643.0~800.0kg/m3,枯水果的密度低于643.0kg/m3.与正常果比较,枯水果的总酸含量、果肉水分含量及出汁率明显下降,过氧化氢酶的活性明显减弱,而呼吸率和乙醇含量明显升高,果胶甲酯酶的活性明显增强.浮皮枯水果的若干生理生化指标之间存在显著的相关性.
