Quick Measurement of the Bioavailability of Fe and Se in Rice Used Mouse Model

Abstract: 为研究不同水稻品种的Fe/Se生物有效性差异,分别用5个水稻品种(Ⅱ优838、协优46、Ⅱ优2070、协优9308、金优987)的稻米对小白鼠进行饲养,饲养时间为30 d,运用ICP(等离子体光谱仪)测定了小白鼠血清和稻米中的Fe/Se含量,计算两者的比值。结果表明,小白鼠的血清铁含量同喂食的稻米铁含量的比值从高到低为协优9308、Ⅱ优2070,Ⅱ优838,协优46,金优987,而血清硒含量同喂食的稻米硒含量的比值从高到低为Ⅱ优2070,金优987,协优46,Ⅱ优838,协优9308。即5个水稻品种的铁生物有效性从高到低为协优9308,Ⅱ优2070,Ⅱ优838,协优46,金优987,硒生物有效性从高到低为Ⅱ优2070,金优987,协优46,Ⅱ优838,协优9308。对于缺铁或缺硒人群,可选择合适品种稻米食用。
