Abstract: 文章研究了7种发酵豆制品(豆豉、腐乳和臭豆腐)提取物对乙酰胆碱酯酶(AChE)的抑制能力.用不同溶剂(水、甲醇、乙醇)提取发酵豆制品,结果表明乙醇提取物的抑制活性最强,水提取物基本无抑制活性;同时,豆豉提取物具有最大的AChE抑制率,白腐乳的抑制能力最小.采用不同浓度乙醇提取时,抑制率随乙醇浓度增加而增大.实验还对乙醇提取物进一步采用不同极性溶剂萃取,并测定了萃取组分的AChE抑制活性.
