Abstract: 对黄沙鳖与中华鳖肌肉氨基酸含量及组成进行分析比较。结果表明,黄沙鳖肌肉的氨基酸含量比中华鳖稍高,分别为20.11%和18.92%,必需氨基酸分别占氨基酸总量的40.44%和40.55%,鲜味氨基酸含量相当。但是根据AAS和CS,第一限制性氨基酸都为蛋氨酸+胱氨酸,黄沙鳖的必需氨基酸指数高于中华鳖,表明黄沙鳖的蛋白质品质稍优越于中华鳖。
