Abstract: 甘蔗梢包括甘蔗蔗茎顶部生长点及以下2至3节,约占全蔗茎10%-15%.蔗梢含丰富的氨基酸,开发蔗梢饮料及其浓缩汁,是甘蔗综合利用的好途径.本文在测定新台糖22号蔗梢氨基酸含量的基础上,以最大程度保留氨基酸、降低制品色值、降低浑浊度为目的,采用安全的豆浆-石灰法澄清蔗梢汁,探讨其最佳工艺参数.
