Preliminary exploration in HN enzyme degradation of sugar pigment material

Abstract: 本文使用HN菌种进行培养,得到菌丝体,通过优化超声破碎菌丝体细胞的实验条件,提取细胞内酶,并用丙酮沉淀的方法提取得到HN酶.研究HN酶对白砂糖中主要色素物质(焦糖、酚类物)的降解.结果表明:26%浓度的白砂糖溶液加入HN酶,焦糖含量平均减少84.14%,总酚含量平均减少75.07%,色值平均减少64.69%,简纯度平均升高0.78百分点.
