Abstract: 对甜菜红色素得率和色价、精制、稳定化的诸多因子做了试验,明确了pH值为3,温度70℃甜菜红色素浸出率、得率最高,A值最大;在80-90℃条件下持续3-5min有效抑制多酚氧化酶活性;不同提取方法试验表明,多级连续浸提效果较好.
