Abstract: <正> 苋菜为一年生苋科作物。其嫩茎和叶味道鲜美营养价值高,含有丰富的脂肪、蛋白质和多种维生素、烟酸、磷、钾等。尤其是铁和钙的含量高出菠菜的一倍,胡萝卜素、维生素C的含量均高于番茄,赖氨酸含量超过牛奶,所以民间素有“端午苋赛猪肝,六月苋金不换”的谚语,特别是红苋菜中含铁和钙丰富,用汤给乳婴儿补钙很好。粗茎腌制后为僧尼的好菜肴。苋菜叶、籽、根均可入药,味甘性凉无毒,有解毒、清热、利尿、止血等作用,中医常用它治下痢、尿血、慢、急性胃肠炎、下肢橡皮肿、麻疹、便秘等症。
