Abstract: 《药膳食疗》(2002年第12期)曾刊出“抗癌佳品话鳗鱼”一文,文中介绍一则原方:“将鳗鲡的头炙成灰后吞服,用来治疗肠癌”。目前尚未找到科学依据,正如文中所叙:“仅靠这个验方来治愈肠癌,是不可能的”。这说明鳗鲡不是(至少是目前)“抗癌佳品”。不过在食疗和药用上,对其他一些疾病,确有防治的功效。鳗鲡,又名白鳝、鳗、蛇鱼、河鳗、乌耳鳗、白鳗、青鳝、青鳗等。其营养成份相当高,据分析:每100g鳗鲡肉中含蛋白质18.6g,脂肪10.8g,碳水化合物2.3g,烟酸3.8m g,维生素E3.6m g,钾207m g,镁34m g,铁1.5m g,锌1.15m g,铜0.18m g,磷248m g硒33.6
