Abstract: 建立了气相色谱-串联质谱法测定酱油中氨基甲酸乙酯的方法,酱油样品在层析柱中用乙醇:二氯甲烷(1:9)洗脱,采用DB-225MS毛细管柱分离样品,GC/MS/MS检测氨基甲酸乙酯的含量,方法线性范围为5500μg/L,方法检出限和定量限分别为5和10μg/kg,标准加入20500μg/kg的平均回收率为88.00%93.58%,本方法具有操作简便、快速、准确等优点,适用于酱油中的氨基甲酸乙酯检测。
