Increment of tomato juice yield by pectinase

Abstract: The optimal process conditions of increasing tomato juice yield by pectinase were obtained through single factor and orthogonal experiments determine in this paper.The optimum conditions were as followed: pectinase content 0.18%, enzymatic hydrolysis time 90min and temperature 50℃.Under these conditions, the highest juice yield of tomato was 75.5%, which was increased by 19.7% compared with the control.
