Abstract: 以金秋梨为试验材料,研究其贮藏过程中外现色泽、褐变度及酚类物质含量的变化.结果表明:随着贮藏时间的增长,金秋梨褐变度变大.室温下贮藏比5℃条件下贮藏变化明显,果皮的变化最大,果心次之,果内的变化最小;总酚含量均有所提高,5℃条件下梨的总酚含量变化较平缓,室温下金秋梨的总酚含量变化大.
